Caprese Flatbread with Balsamic Reduction

This Caprese Flatbread has the perfect combination of fresh flavors from the basil, roasted tomato, and then topped off with a sweet Balsamic Reduction. All I can say is OH MY GOSH! Plus, it is super easy to make. I roasted the tomatoes in the afternoon because I knew I was going to be making it that night. Mike got home from work, we went to go look at land to purchase and came back. I assembled the flatbreads in like 5 minutes and 10 minutes later we had absolute deliciousness waiting for us.

1 pint of grape tomatoes
2 T. of olive oil
salt
2 pieces of whole wheat naan bread
1 teaspoon of minced garlic {approximately 1 garlic clove}
2 T. of olive oil
8 oz. of fresh mozzarella cheese, sliced
3 T. of basil, roughly chopped
Balsamic Reduction:
1 cup of good balsamic vinegar
