This dish was perfectly creamy — just like Rachel’s. And the onions…well, there aren’t words to describe how sweet and flavorful they were!

1/2 pound whole-wheat penne pasta
2 Tbsp extra-virgin olive oil
1 tsp anchovy paste or 4 flat fillets
2 large onions, thinly sliced
1 bay leaf
Freshly ground black pepper
1 Tbsp flour
1/2 cup cream
1/4 cup pasta water
1/2 cup grated Parmigiano-Reggiano, a couple of handfuls
1/4 cup finely chopped fresh flat-leaf parsley
