This is the most amazing Key Lime Poke Cake. It is infused with a perfect balance of sub­tle lime flavor and sweet goodness. Since you make it ahead, it's perfect for for any occasion.

Cake –

1 box of white cake mix

1 ¼ cups water

2 Tbl. veg­etable oil

4 eggs



Key Lime Filling –

1 can (14 oz.) sweet­ened con­densed milk (not evaporated)

1 cup whip­ping cream

½ cup Key lime juice

1 ½ tsp. grated lime peel (approx 1 lime)



Top­ping –

1 (3.4 oz.) pack­age vanilla instant pud­ding and pie filling

1 cup milk

3 cups thawed frozen non-dairy whipped topping

1 Tbl. grated lime peel (approx. 1 — 2 limes)

1 Tbl. Key Lime juice
