This is a perfect moist, very tasty cake!

2 tsp baking powder

3 cups grated carrots (about 6 large carrots)
1 cup coarsely chopped walnuts
1 cup shredded coconut (sweetened or unsweetened)
2 cups granulated sugar
1 cup unsweetened applesauce

8 oz cream cheese, at room temperature
1/2 cup (1 stick) unsalted butter, at room temperature
1 lb (3 3/4 cups) powdered sugar
1 TBSP vanilla
