Cashew Chicken Quinoa Bake

A 1 pot meal that is packed with flavor! Easy to prepare and is ready in less than an hour!

1 cup quinoa, rinsed and uncooked
1 cup onion, minced
2 medium peppers, chopped into bite-sized pieces
1 cup mushrooms, sliced
3 large chicken breasts, diced into bite-sized pieces
½ cup hoisin sauce
2 cloves garlic, minced
2 tablespoons soy sauce
½ tablespoon fresh ginger, minced
1 cup water
1 cup cashews, roasted and slightly salted
