This Cauliflower Burrito Vegan would make the perfect meal when you want something substantial but healthy recipe.

4 - 6 bowls
1 cup brown or white rice
1 head cauliflower ( chopped into florets )
1 tbsp olive oil
tbsp taco seasoning ( divided )
1 1/4 ounce can of black beans ( rinsed and drained )
1/2 cup water
2 pieces tomato ( chopped )
1/2 small onion ( chopped )
2 pieces lime ( juice )
1/2 cup fresh cilantro ( chopped )
1 cup cork kernels ( cut off the cobs )
