After last week’s Samoa Bark & Bittersweet Chocolate Peppermint Cookies plus the impending New Year, I think we should lighten things up a bit. After going mostly Paleo a few months back, I have to be honest with you & say that I’m not struggling with missing carbs like I thought I would. Maybe it’s because we do enjoy them in moderation (usually 1 meal a week involves some kind of grain), or maybe it’s because there are so many amazing alternatives, like this cauliflower rice.
