Chambord POM Mimosa

I discovered POM juices a few years ago and I love to put a bit in other non-alcoholic beverages to bump up the flavor. It goes well in ginger ale or a citrus-flavored soda and a splash tastes great in fruit juices too. All the same can be said of Chambord, my favorite liqueur, which I also chose to further mix up my mimosa creation. A splash of raspberry and pomegranate are just enough to refresh this old stand-by.

1 oz. Chambord black raspberry liqueur
1 oz. POM 100% juice
3 oz. champagne (I used moscata)
Combine all ingredients in champagne flute and serve immediately.

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
