This is a creamy and delicious risotto. If you are looking for a special side dish for that special occasion, this is it!

8 oz. Cremini mushrooms, sliced
1 shallot, finely chopped
4 tablespoons butter
1 tablespoon olive oil
1 garlic clove, pressed
6 cups chicken broth
2 cups Arborio rice

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons.
