This fabulous soup is the perfect way to end a cold winter day. It's packed full of veggies, the seasoning is spot on and perfectly compliments the cheese tortellini. And the family all gave it two spoons up as they licked their bowls clean.

1 TBSP olive oil
2 medium carrots
1 medium onion,
chopped 1 stalk celery, sliced
2 garlic cloves, minced
1 tsp dried basil
1/4 tsp black pepper
3 cups chicken stock or vegetable stock
