A great mash-up of potato soup and cheeseburgers. Cheeseburger Soup is a hearty soup filled with potatoes, ground beef, and two different kinds of cheese.

1 lb. ground beef
8 Tbsp butter ( divided )
1/2 lg onion ( chopped )
3/4 c. carrot ( chopped or shredded )
3/4 c. celery ( finely chopped )
4 garlic cloves ( minced )
1 tsp. dried basil
1 tsp. dried parsley
3 c. chicken or beef broth
4-5 medium potatoes ( peeled and cubed )
1/4 c. flour
1-1/2 c. milk
8 oz. Velveeta cheese
4 c. cheddar cheese ( shredded )
1 tsp. salt
1 tsp. pepper
1 tsp. Worcestershire sauce
1 tsp. Liquid Smoke
bacon bits for serving

3 celery stalks diced
