Cheesecake Filled Gingerbread Muffins

Soft, tender muffins with lots of gingerbread flavor! Each muffin is filled with a simple, creamy cheesecake filling and then topped with a crunchy steusel topping.

1 cup brown sugar
2 ½ cups of flour
1 ½ teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
¼ teaspoon nutmeg
½ teaspoon salt
1 cup buttermilk
1 egg
½ cup molasses
½ cup butter, melted

!For the filling
1 8oz package cream cheese, softened
½ cup sugar
1 teaspoon vanilla

!For the streusel
1 cup chopped pecans
1/2 cup brown sugar
2 tablespoons flour
2 tablespoon, butter melted
