Cheesecake Stuffed Lemon Blueberry Cupcakes

Delicious lemon blueberry cupcakes are stuffed with a creamy cheesecake filling and topped with a light lemon buttercream frosting.

1 stick butter, softened
3/4 cup sugar
2 eggs
1 3/4 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 cup sour cream
1/2 cup milk
2 Tbs lemon juice
2 tsp lemon zest
1 cup blueberries

CHEESECAKE FILLING:
4 oz cream cheese, softened
2 Tbs butter, softened
1/2 tsp vanilla
3/4 cup powdered sugar

LEMON BUTTERCREAM:
1 stick butter, softened
1 cup shortening
2 Tbs lemon juice
4-5 cups powdered sugar
