Cheesy Broccoli Quinoa Casserole
Cheesy rice and broccoli gets a makeover with quinoa and real cheese.
2 broccoli crowns, cut into small florets (about 12 ounces)
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 small yellow onion, diced
1 clove garlic, minced
1 tablespoon spicy brown mustard
1/4 teaspoon cayenne pepper
black pepper, to taste
2 cups milk
8 ounces sharp cheddar cheese, shredded
