Cheesy Cauliflower Soup

This Cheesy Cauliflower Soup can be thrown together quickly without sacrificing flavor or texture and is insanely creamy and satisfying that you will go back for seconds!

2-3 tbls coconut oil
1 large sweet onion, chopped
1 large head of cauliflower, separated into small to medium size florets
4 garlic cloves, minced (I use a press directly into the pot)
3 tsp sea salt (I use pink)
½ tsp black pepper
1 tsp red chili flakes (more if you like it spicier like me)
¼ cup all purpose flour (I use King Arthur always)
16 oz (2 cups) coconut milk
24 oz vegetable broth
3 cups white cheese of choice (I recommend sharp white cheddar)
