Cheesy Chicken Enchilada Soup

A thick and cheesy enchilada flavor soup that is ready to eat in under 30 minutes.

2 tablespoons canola oil
1 cup diced yellow onion
2 cloves garlic, minced
1/2 cup corn flour
3 cups chicken stock
2 cups cooked shredded chicken
10 ounces (1 1/4 cups) red enchilada sauce
14 ounce can no salt added black beans, rinsed and drained
14 ounce can no salt added diced tomatoes
4 ounce can chopped green chiles
1/2 teaspoon ground cumin
8 ounces sharp cheddar cheese, shredded

Toppings (optional):
crushed tortilla chips or strips
shredded cheese
