Cheesy Corn and Smoked Paprika Risotto

A creamy and cheesy risotto that highlights the taste of late summer\\\'s corn harvest.

1 cup arborio rice
4 cups chicken stock
1/2 cup white wine
1 small onion, chopped
2 cloves garlic, pressed
3 tablespoons butter
1 tablespoon oil
1/4 cup grated Italian cheese
2-3 ears of corn, roasted and cut off the cob
