Creamy Cheesecake Ice Cream with a tart cherry sauce and dark chocolate.

Cheesecake Ice Cream:
8 ounce package cream cheese, room temperature and cut into cubes
3/4 cup half and half
3/4 cup granulated sugar
1 1/4 cups heavy cream
1/2 teaspoon vanilla extract
1/2 cup dark chocolate chips, roughly chopped
Cherry Sauce:
1 1/2 tablespoons lemon juice
2 cups frozen tart cherries
4 1/2 tablespoons granulated sugar
1 1/2 tablespoons lemon juice
1 1/2 teaspoons cornstarch
1 1/2 tablespoons water

In a food processor or stand mixer, add in the cream cheese and half and half. Mix until well combined.
