Chewy Soft Peppermint Brownie Cookies

All I can say is, "Oh my...yummy!" when it comes to these Chewy Soft Peppermint Brownie Cookies. They really are the perfect handheld Christmas dessert!

2/3 cup butter, softened
2 eggs
1 1/2 c. brown sugar
1 1/2 c. flour
1 T. water
1/3 c. cocoa
1 tsp. vanilla
1/4 tsp. baking soda
1 c. Andes Peppermint Crunch Baking Chips, or to taste
1/2 t. salt
