Chicken and Sausage Gumbo

This Louisiana Chicken and Sausage Gumbo with okra, a roux, and The Holy Trinity of onions, celery and bell peppers is a classic Cajun stew! Top each bowl with a scoop of rice for a hearty, flavorful and satisfying dinner. You don't need to go to New Orleans to enjoy an easy gumbo recipe!

.25 c salted butter
.25 c all purpose flour
.25 c finely diced onion
.5 c finely diced green bell pepper
.5 c finely diced celery
2 cloves garlic
12 oz andouille sausage
4 c chicken broth
28 oz petite diced tomatoes
1 t dried thyme
.5 t dried oregano
1 bay leaf
2 t paprika
.25 t cayenne
3 c cooked shredded chicken
1 c cut okra
2 green onions
.25 c chopped fresh parsley
2 t file powder
kosher salt ( to taste )
4 c cooked white rice
