Chicken Breast with Spinach-Ricotta

4 pounds boneless skinless chicken breasts flatten
5 tablespoons Secolari Oregano Olive Oil or Secolari basil olive oil
2 cups baby spinach roughly chopped
(8 tbsp.) whole ricotta
4 tsp. ground nutmeg
1 tsp. Secolari Wild Porcini Sea Salt
1 tsp black pepper
1 tsp red pepper flakes
3 tablespoons Secolari Fig Balsamic to drizzle
1 cup all purpose flour for dredging
2 each eggs lightly beaten
2 cup italian breadcrumbs
2 cup finely grated parmesan cheese
  1. Flatten each chicken breast between 2 pieces of wax paper evenly using a meat mallet. Sprinkle with salt and pepper on both sides.
