Chicken Chili Stew

A filling chili/stew that I made vegan.

1 tablespoon canola oil
1 medium sweet onion, chopped
1 yellow bell pepper, chopped
5 cloves garlic, chopped
1 small jalapeno, seeds removed and chopped
1 tablespoon chili powder
4 cups no-chicken broth
1 medium sweet potato, peeled and cubed
2 cups salsa verde, store bought
1 package (I actually made my own) chicken flavor seitan
1 (15 ounce) can pinto beans, drained and rinsed
1/2 cup packed fresh cilantro, chopped
salt and pepper to taste
1 avocado, diced, for garnish
Sour cream, vegan of course, for garnish
