These dumplings are the ultimate complement to this comfort food dish!

4 chicken thighs
4 cups chicken broth or stock
4 cups water
3 large carrots, peeled and cut into 1" pieces
5 ribs celery, cut into 1" pieces
½ large onion, chopped
4 T butter
4 T flour
Dumplings:
1½ cups flour
3 tsp baking powder
2 T fresh flat leaf parsley
Salt

½ cup milk
1 egg
