1 orange bell pepper ( diced )
1/3 cup red onion ( diced )
14 oz enchilada sauce ( no sugar added )
6 oz green chiles
2 tbsp garlic ( minced )
1/2 tsp chili powder
1/2 tsp oregano
1/2 cup quinoa ( uncooked )

1/3 cup red onion ( diced )
