Chicken Enchilada Soup

This is another easy peasy recipe and it tastes delicious! It is filled with fabulous vegetables and gooey cheese.

1 tablespoon oil
1 white onion ( chopped )
2 bell peppers ( chopped )
1 package enchilada sauce
8 oz cream cheese
1 can diced tomatoes
1 can black beans ( drained and rinsed )
1 can corn kernels ( drained )
2 cups cooked chicken from a roasted chicken ( chopped )
1 cup chicken broth
2 green onions ( chopped )
1 cup Tex Mex cheese ( shredded )

Heat the oil in a large pot, over medium heat. Add the onion and bell pepper and cook for about 5 minutes until the onion is soft and translucent.

Add the enchilada sauce and cream cheese. Break...
