Chicken Nachos with Peach Salsa are bursting with bright summer flavors. Featuring juicy, ripe peaches, fresh chopped veggies and herbs, perfectly cooked chicken and a homemade tomatillo sauce, these nachos will have skipping the taco stand!

[u][i][b]Peach Salsa[/b][/i][/u]
1 peach, diced
1 red pepper, diced
1 jalapeno pepper, seeded and diced
1 green onion, chopped
1/4 cup red onion, diced
the juice and zest of 1 lime
1 tablespoon cilantro, chopped
1 bag of tortilla chips, I used Beanitos
1 rotisserie chicken, shredded (I used 1lb of chicken) or cooked and shredded chicken breasts.
Tomatillo salsa (store bought or homemade) or Salsa Verde
Toppings of your choice; cheese, lettuce, sour cream
Combine all ingredients for Peach Salsa and place in fridge for 30 minutes for flavors to meld. Arrange tortillas on a platter(s) Top with shredded chicken, tomatillo sauce, peach salsa and toppings of choice.
