Pie Crust:
1 1/4 cups all purpose flour
1/2 teaspoon salt
1/2 cup butter frozen
4-5 tablespoons chilled water
1/2 teaspoon cider vinegar
Chicken Mixture:
5 tablespoons butter
1 small onion finely chopped
2 carrots peeled and chopped
2 ribs celery chopped
2 medium potatoes peeled and cut in small cubes
1/3 cup flour
2 1/2 cups low sodium chicken broth
2 teaspoons fresh thyme leaves
3 cups diced or shredded chicken
salt and pepper to taste
1 egg
1 tablespoon water
