This Chicken Potato Salad with Apple is satisfying and filling. A light salad that will make you feel full longer. A good source of protein and carbohydrates and apple that adds flavor to this SALAD.

4 pieces large potatoes, peeled, cooked and diced
1 cup diced carrots
1 cup peas
1 piece large chicken breast cooked and shredded
2 pieces apples, peeled and diced
1/2 cup diced white onion
Lime juice from 2 limes
1/2 cup mayonnaise
1/2 cup sour cream or plain yogurt
3 tablespoons finely chopped cilantro or parsley
Salt and pepper to taste
  1. Simmer the chicken breast within 15-20 minutes until cooked. Drain it and shred. If you are using rotisserie chicken just remove the skin then shred it.
