Chicken Salad Croissant Sandwiches

This chicken salad is easy to make, especially if you use ready-made rotisserie chicken! Just put it together a few hours before serving to let the flavors come together.

1 cup diced, rotisserie cooked chicken*
1/2 cup diced celery
3-4 green onion tops (you can use the white part too if you like a stronger flavor)
1/4 c. slivered almonds
1/4 – 1/2 teaspoon Old Bay Seasoning
1/3 – 1/2 cup mayonnaise
2 Croissant rolls
1/2 cup diced celery

Stir the first 5 ingredients together. Then add the mayonnaise. Refrigerate several hours before serving. Serve on a sliced Croissant Roll with some green ruffle lettuce!
