Chicken Salad (With Pasta and Veggies)

Right after college, while looking for a job in my field, I worked in a shopping mall. I didn’t have much time to have lunch or dinner, so I usually just ate a salad at a salad bar called Vitaminas. Since then, 7 years ago {ouch!}, I’ve only had one of their salads maybe a half dozen times. Today I was craving one so I decided to make it at home. And it’s really easy too.

- Handful of romaine lettuce
- Handful of baby spinach
- 1 cup of cooked pasta – I prefer fusilli
- 1/3 cup of cooked corn
- 1/3 cup of cooked peas
- 6/7 cherry tomatoes
- about 1/2 cup of grilled chicken breast, cut into strips
- dressing of your choice – we use a salad “salsa light” from Linessa (only 18cals per tablespoon)
Just assemble it using a big bowl or plate and you’re good to go!
