Chicken Tortilla Soup for Crockpot

Warm soup in the crockpot.

2 T. cooking oil
1 medium onion, chopped
1 can (4 oz.) chopped green chilies
4 cloves garlic, minced
1 can (28 oz) cut tomatoes
1 can (14.5 oz) beef broth
1 can (14.5 oz) chicken broth
1 can (10 oz) tomato soup
1 cup water
1 t ground cumin
1/2 t oregano (or less)
1 can (15 oz) black beans, rinsed
1 can (15 oz) corn, drained
1 T lemon or lime juice
1/2 cup cheddar cheese, grated
Shredded or cubed chicken
Saute onion and chilies in oil until tender. Add minced garlic and heat briefly. Do not allow garlic to brown. Transfer to stockpot or crockpot. Add remaining ingredients and simmer uncovered, or cook on high for 3-4 hours.

I love it because it's great for a holiday dinner. Everyone raves and it get devoured in no time. But, it's also perfect for busy weeknights. You can easily assemble this casserole ahead of time and stash it in the fridge until you're ready to eat it. Then just bake it off. 30 minutes and done!
