1 lb tomatillos, husks removed
6 cloves garlic
1 tablespoon olive oil
4 cups loosely packed baby spinach ( 3 oz )
1 tablespoon sugar
1 teaspoon kosher salt
1 teaspoon red pepper flakes
CHICKEN:
1 lb skinless, boneless chicken breast
salt and pepper

SWEET POTATOES:
1 large sweet potato ( peeled and cut into 1 1/2 inches cubes )

1 cup dry quinoa ( rinsed )
1 teaspoon chile powder
1/2 teaspoon kosher salt
1/4 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
