Chickpea cutlets with mustard lovers sauce is a plant-based, oil-free decadence without the guilt. It dresses up a holiday meal but is so easy you can make it any day of the week.

15 oz. can chickpeas
1/4 cup diced onioin
1/4 cup fresh parsley chopped
1 clove gralic
1/3 cup Seitan, wheat gluten ( look for this in the health food section )
2 tbsp. water
1/2 cup bread crumbs
1 tbsp. arrowroot or cornstarch
1 tbsp. water
2 tbsp. red onion, finely chopped
2 cloves garlic
1 tbsp. soy sauce or Tamari
1 tbsp. lemon juice
1/4 cup prepared mustard ( use Dijon or mild depending on taste )
1 cup vegetable broth

Cutlets:

Preheat the oven 4000 F (2200 C)

Drain and rinse the chickpeas, place them into a bowl and mash them using a fork or potato masher.
