Chickpeas with pickled onions salad

This salad is great for summer time! I added avocados, peppers, paprika to name a few. You can customize it the way you want. Tomatoes are also a great addition! The cooking time is due to me using uncooked chickpeas. If you can canned chickpeas, it will cut the time substantially.

cups Pickled onions ( 3/4 )
each Lime ( 2 )
each Avocado ( 2 )
cup Peppers ( 2 )
cup chickpeas ( 1 )
each greens onions ( 3 stalks )
teaspoon paprika ( 1 )
handful cilantro ( 1 )
to taste salt ( 1 tsp )
to taste pepper ( 1/4 tsp )
  1. Put all the ingredients in a big bowl and mix well.
  2. Refrigerate it with a plastic wrap for at least 30 min.
  3. Serve cold.
