1 large boneless, skinless chicken breast, butterflied--sliced horizontally in half
1/2 cup shredded mozzarella cheese (optional)
1 tsp chili powder
1 tsp fresh lime juice
2 tsp olive oil
1/4 tsp cumin
1/4 tsp paprika
1/4 tsp onion powder
1/4 tsp garlic powder
salt and pepper
1/2 tsp brown sugar
dash cayenne pepper
Mango Avocado Salsa:
1/2 of a ripe mango, peeled, pitted, and diced
1/2 of an avocado, pitted, peeled, and diced
1/2 of a small red onion, diced
2 heaping Tbsp chopped fresh cilantro
1/4-1/2 of a serrano pepper, seeds and veins removed, minced
1 Tbsp fresh lime juice
salt, to taste
