Onion, meat, and spices are some of the common ingredients in soup and can withstand a long period of cooking. If you add them to this recipe, do so at the beginning and simmer them low and slow to develop more flavor. Aromatics such as rosemary, cloves, parsley, and bay leaf would all be great additions to this dish. They would all enhance the flavor of the vegetable stock. Roasted onions and garlic would also be nice. You can add a cup of spinach 5 minutes before serving.
