Chilli Noodle Broth
This chilli noodle broth is so easy to make, it has such a deep flavour and the rice noodles go so well with it. If it is winter time where you are from, I recommend you try this recipe.
300 grams bok choy ( washed and thickly sliced )
1.75 Liters vegetable stock
1 clove garlic ( peeled )
1 tablespoon ginger ( peeled )
1/4 teaspoon chilli flakes
1/2 onion ( peeled )
2 bay leaves
1 stick spring onion ( thinly sliced )
100 grams beans sprouts
1/2 tablespoon soy sauce
Get a large pot of salted boiling water. Add the rice noodles and cook for about 6-7 minutes, then add your bok choy and cook for another 40 seconds.
