Chimichurri Pork Rice Bowls

Chimichurri sauce is one of my favorite toppers for grilled meats and veggies and this rice bowl is the perfect use! Grilled pork tenderloin, sweet corn, fresh tomatoes, and an easy chimichurri sauce that works for both a marinade and a sauce. Love it!

1 1/2 pounds pork loin (2 small pork loins or one larger one)
2 ears sweet corn
1 pint grape tomatoes
Long grain rice, for bowls
Fresh parsley, garnish
Chimichurri Sauce and Marinade::
6 cloves garlic
1 jalapeno, chopped
2 shallots, chopped
1/2 cup fresh parsley
1/3 cup fresh oregano
1/3 cup red wine vinegar
3 limes, juice only
1 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon paprika
1/2 teaspoon black pepper
