chocolate & anise tye plate cookies

A thin, crispy italian lace cookie.

70
6large eggs,1 1/2 cups sugar,3/4 cup canola oil,1 3/4cup flour
Flavourings - 1 1/2 tbs spirit of anise
2tsp coffee extract, 2 heaping tsp cocoa
A tye plate or pizelle iron.
In a bowl beat eggs til a lemon colour, add sugar, flour and oil, mix well ( this will be more like a batter than a dough). Divide the mixture in 2 bowls. In one add the spirit of anise, blend well. For the chocolate, add in cocoa and coffee extract, again blending well. Heat the iron, Drop a full tablespoon onto the plate and close lid. Timing differs from iron to iron but it takes usually no more than one minute for it to come to a blond colour on the anise and the chocolate to stiffin up. Cool in a single layer on papertowel. Store in a cool dry area. Makes about 70.
