Chocolate Blackberry Cupcakes

This Chocolate Blackberry Cupcake is sooo good. It's made from scratch, but don't let that scare you! This recipe may be from scratch, but it's not a Food Network-level undertaking. Anyone can make it, I promise. It's one of those recipes that's easy to make, but it makes you look like you really went all out. You get all the compliments without nearly the amount of work that people think you must have put into it!

Chocolate Cake:
1/4 cup Unsalted butter ( softened )
1 cup Sugar
1 cup Chocolate chips
2 Large eggs ( room temperature )
2 Large egg yolks ( room temperature )
1/2 cup Vegetable oil
2 teaspoons Vanilla extract
1/3 cup Sour cream
1 cup Flour
1/2 teaspoon Salt
1/2 teaspoon Baking powder
1/2 cup Cocoa powder
1/2 cup Whole milk
Blackberry Compote:
2 cups Blackberries
3/4 cups Sugar
2 tablespoon Lemon juice
1 tablespoon Fruite pectin or corn starch
Blackberry Frosting:
2 cups Butter ( softened )
6-8 cups Powdered sugar
1 cup Fresh blackberries ( washed, crushed )

For the Cupcakes:

  1. Pre-heat the oven to 350 degrees F
