An easy twist on a classic, the marshmallows in this cookie melt and caramelize, bringing a whole other level to the humble cookie! They are freezer friendly as well... if they make it that far!

½ cup unsalted butter
½ cup packed light brown sugar
½ cup granulated sugar
1 large egg, room temperature
1 tsp vanilla extract
1¼ cup all purpose flour
