These Peach Cobbler Crumb Muffins are soft, crumbly and full of sweet peaches.
1 stick butter, melted 1/2 cup sugar 1/2 cup flour 1/2 cup brown sugar 1/2 cup quick oats 2 cups flour 1 tsp. baking soda 1 tsp. baking powder 15 oz. can sliced peaches, cut into quarters and reserving 1 Tbl. of the juice 3 tablespoons butter, melted 1/4 cup sugar 1/4 cup brown sugar 2 eggs, beaten 2 tsp. cinnamon 1 tsp. vanilla 1/2 cup milk 1 tablespoon peach juice 1 cup powdered sugar 1/2 tsp. lemon extract or lemon juice
Preheat oven to 350* Grease of line a muffin pan.
For the crumb coating: Combine all of the ingredients together until well combined and crumbly. Set aside.

Add 1/2 cup of blanched marcona almonds into a food processor and pulse for about 30-45 seconds, you want the almonds to be roughly chopped and not fully grounded up
