4 ounces chopped unsweetened chocolate
1 cup hot boiling water
2 cups raw sugar
1 1/2 cups all-purpose gluten-free flour
3/4 teaspoons xanthan gum
3/4 teaspoon baking soda

1 tablespoon Hershey's dark cocoa powder
8 tablespoons melted unsalted butter
2 medium sized eggs
2 teaspoons vanilla extract
1/2 cup sour cream
Raspberry Frosting:
1 cup softened salted butter
6 cups powdered sugar
7 tablespoons raspberry puree (made from around 1 1/2 cups of fresh raspberries - see the instructions below)
1 teaspoons pure vanilla extract
