Chocolate Samoa Bark

Last year, I attempted this Samoa Bark & nearly tore out several fillings. I did everything wrong when it comes to caramel– letting it sit on the heat for too long, piling it too high, & eating it straight from the freezer. I’m lucky that I didn’t have any serious bodily injuries because rock-hard caramel can be quite dangerous, as can scalding caramel, & a heaping bowl of innocent-looking unwrapped caramels. No wait, that’s just torture, nevermind. I’m going to the dentist tomorrow

12 oz. dark chocolate, divided
35-40 shortbread cookies
14 oz bag of caramels
3 cups unsweetened flaked coconut
3 Tbsp water
