Chorizo Breakfast Lasagna

Not your typical lasagna! Perfect any time of day!

7 Ten-inch Flour Tortillas (if you use smaller tortillas, you’ll need more)
4 Cups Beans, mashed (I used pinto beans)
8 Large Eggs, scrambled
1 ½ Lbs. Chorizo, cooked and drained of any excess fat
Approximately 1 Cup Shredded Cheese (I used pepper jack)
Salsa, to taste
Optional Toppings: sour cream, cilantro, queso fresco (or whatever cheese you’d like)
Preheat your oven to 375 degrees F. Lightly spray an 11” x 14” casserole dish with cooking spray.
