EQUATION – Cilantro chutney + a fried egg + cheese + veggies + butter grilled bread=YUM!

This is the ultimate loaded grilled cheese! I mean cilantro chutney on its own tastes amazing with eggs. If you're of a Gujarati decent, then cilantro chutney is definitely a condiment that was frequented during meals. So this combo will be something your tastebuds will absolutely love. The compilation of crunchy, cheesy, and my favorite "runny" makes this a perfect recipe. Breakfast, brunch, lunch, dinner, or snack… this is THE meal you want to add to your weekly menu!

8 slices bread
4 slices cheese (pepperjack, american, cheddar)
1 chopped jalapeno-serrano-thai chili
4 tbsp chopped onion
4 tbsp chopped tomato
4 eggs
8 tbsp butter for bread (salted tastes better)
8 tbsp cilantro chutney
baby spinach
oil/butter to cook egg
Cilantro Chutney:
salt
1 tsp lemon juice
1 jalapeno-serrano-thai chili (based on your spice level tolerance)
2 garlic cloves
1 bunch cilantro
