This right here is everything a fish taco should be. Flakey grilled fish, a sprinkle of cilantro with a hint of lime. And the Roasted Corn Slaw with a slice of avocado tops it off the perfection for the win!

Roasted Corn Slaw
Ingredients:
1 cup frozen whole kernel corn
2 tablespoons mayonnaise
1 tablespoon lime juice
1/4 teaspoon salt
2 tablespoons fresh cilantro, chopped
2 cups finely shredded cabbage

Cilantro Lime Fish Tacos
Ingredients:
1 teaspoon olive oil
1 small white or yellow onion, finely chopped
4 garlic cloves, finely minced
1 jalapeno pepper, seeded and finely diced (optional)
2 ripe tomatoes, chopped
3 tablespoons fresh lime juice
1 pound tilapia
Salt and pepper to taste
1/4 cup chopped fresh cilantro
8 5-inch white corn tortillas
1-2 ripe avocados, sliced
Lime wedges and cilantro for garnish
