Cinnamon Sugar Breakfast Muffins

These incredible muffins are moist, buttery, and covered with cinnamon sugar. AND they are healthy enough to eat for breakfast!!

1/3 cup butter or margarine, melted
1/2 cup sugar
1 egg
1 1/2 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/2 cup milk

1/4 cup sugar
3 tablespoons butter or margarine, melted
1/2 teaspoon cinnamon
In a large mixing bowl, mix together all of the dry ingredients until well-combined. Mix in melted butter, egg, vanilla, and milk. Mix BY HAND until just combined. Do not overmix! Divide batter evenly between 8-10 greased muffin tins. Bake at 350 for 15 minutes, or until toothpick inserted into the center of the muffins comes out clean. Allow muffins to cool for 10 -15 minutes.
