These pancakes are light and tender and tangy, so they’re pretty much the perfect, classic pancakes.

3 T. granulated sugar
1/4 tsp. salt

1/2 tsp. baking soda
2 c. low-fat buttermilk
1/4 c. non-fat Greek yogurt
2 large eggs
3 T. butter, melted and cooled slightly
