2 cloves garlic
1 cup freshly grated Parmesan cheese
2 teaspoons anchovy paste ( or 4 anchovy fillets, mashed )
1/4 cup freshly-squeezed lemon juice
4 teaspoons Dijon mustard
2 teaspoons red wine vinegar
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
Freshly ground black pepper ( to taste )
2/3 cup extra-virgin olive oil
16 ounces of romaine ( washed, dried, and chilled )
Garlic Croutons ( store bought or homemade )
Freshly shaved Parmesan
